Chocolate & Coffee Cupcake Recipe

Here's another favorite of mine. Found this recipe on the net. Try out these as they are absolutely fine in texture and have a distinct coffee taste (which my kids didn't mind!) and are perfect for that little tea party with your better half or a good neighbor... :)

Serving : Makes 24 medium sized cupcakes

Ingredients :

3/4 cup butter
1 cup soft dark brown sugar (i didn't have brown sugar at the moment so i used 2 cups of castor)
1/2 cup caster sugar
3 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
3/4 cup cocoa powder
2 tbs coffee granules (i reduced this to 1 tbs only for the kids' sake)
1 1/2 cup milk
2 tsp vanilla extract

How to :

I have the knack for dumping all ingredients together which i did in this recipe. Ni case supermom yg malas...! But perhaps you should combine all dry ingredients first. Whip butter and sugar then add all other ingredients left. Have both dry and wet ingredients mixed well. Don't over whisk ya! 5-8 minutes tops and fill up batter to 2/3 of the paper mold. I used Reynold's cupcake molds as they're very easy to use and you do not need a baking mold for this.

Bake for 25 min@ 180 degrees celcius.
